A close relative of pigweed, amaranth has been valued since ancient times for its nutritional and ornamental qualities. One of the highest-protein grains, with numerous medicinal attributes, amaranth has excellent potential in health food and nutraceutical markets. Amaranth's sweet, nutty flavor complements a range of cereal products, and its starch could replace fat in processed foods.

The genus Amaranthus includes about sixty species which are classified according to their uses as grain amaranths, leaf amaranths (A. tricolor), and dual-purpose amaranths. Chinese spinach or yin choy (var.gangeticus), A. dubius, A. hybridus, and A. cruentus all belong to the very useful leaf amaranths of the Third World..

Amaranth is high in protein, lysine, calcium, iron and fiber - all useful as functional ingredients in cereal products. Amaranth oils are high in "squalene", a powerful antioxidant used as a dietary supplement for diabetics and those suffering from hypertension and metabolic disorders.


AMARANTH OIL (AMARANTHUS CANDATUS)

Amaranth Oil is a great of value. It contains about 77 % of non-saturated fatty acids (about 50 % of linolenic and linoleic acids, squalene and vitamin E in the rare form of tocotriene which takes part in the biosynthesis of cholesterol.

Wide using of amaranth oil is explained by its unique active biological matters: amino acids, microelements, minerals, vitamins, proteins, polynonsaturated fatty acids, choline, gall acids, spirits, steroids and squalene.

Squalene

Squalene is a matter which takes the oxygen and brings it to the organs of the organism. So it's a powerful anticancer substance. Squalene can penetrate through the skin into the body and plays a great role for the immunity. Amaranth Oil has 8 % of squalene– a marked olefin. Squalene was first isolated from the liver of a shark, but it is also found naturally in the skin of humans.

Squalene is said to have properties that ward off cancer producing substances in the body. It also fights against bacteria, fungi, herpes and other viruses, and improves autoimmune disorders. Shark oil has a 1% squalene content, while the content of amaranth oil is 8%. Amaranth oil has antibacterial, anti-tumor, and burn- and wound-healing properties. Animal tests also show amaranth lowers blood serum cholesterol, and some varieties contain up to three percent rutin.
